Snijd de watermeloen in stukjes, de tomaat in partjes, de avocado in blokjes en de rode ui in dunne halve ringen. Snijd de jalapeno peper in plakjes.
Verdeel de watermeloen over een (diep) bord, verdeel hier de tomaten, avocado, rode ui en jalapeno peper overheen.
Hak de cashewnoten grof, rooster (optioneel) de cashewnoten en pompoenpitten even kort in een droge koekenpan. Verdeel de cashewnoot, pompoenpitten en het sesamzaad over de salade. Verdeel wat verse basilicumblaadjes over de salade.
Maak de dressing. Pers het teentje knoflook en rasp de gember. Roer de sojasaus, 2 theelepels limoensap, de rijstazijn, olie, knoflook, gember en wat peper en zout in een schaaltje door elkaar.
Verdeel de dressing over de watermeloen salade. Serveer direct.
